Server 2008 R2 Migration

We are preparing to do a server migration this weekend on a production server. There is close to 350Gb to copy over. We started doing an initial Backup using "FastBackup" to seed the destination server. It's got 2 days 4 hrs to go. Once that is done we want to make sure we capture any additional changes from last night when we started to Saturday evening when we start the migration. Not sure if FastBackup or Sync (Mirror) is the way to go so I figured I'd ask before we get too far incase I have to change the profile. Am I doing it the right way?
